Description
Santannella di Mandrarossa was born in Menfi, on the south-western coast of Sicily, from a unique blend of a typical southern Italian grape, Fiano, with the intriguing Chenin Blanc originating from the Loire.
The harvest takes place separately for the two varieties: for the Chenin Blanc the harvest takes place at the end of August, for the Fiano during the second week of September. The vinification continues separately with a first short phase of cold maceration followed by a fermentation of 3 months in steel tanks. The Fiano ages for 4 months in barrique while the Chenin Blanc remains to refine for 6 months in steel. The process ends with the assembly and subsequent bottling.
It is a wine that develops in the glass with a deep straw yellow color with golden reflections. The olfactory spectrum revolves around a range of ripe fruit, from which intriguing nuances of almond and hazelnut emerge. In the mouth it has an intense and full taste, vaguely mineral, characteristics that make it satisfying and pleasant.
It goes well with shellfish, white meats and grilled vegetables.
