Planeta's Eruzione 1614 Riesling is the first Riesling produced on Etna and in Sicily, grown at 815 meters above sea level on the lands formed by the historic eruption of 1614. The soils are characterized by calcareous marl and lava sand, extremely rich in minerals which, together with organic and sustainable cultivation, are a unique combination of factors that contribute to creating a wine that expresses the distinctive character of its territory.
The harvest takes place in mid-September with the grapes harvested by hand, refrigerated immediately and subjected to scrupulous selection. After destemming, the grapes undergo a short period of maceration on the skins followed by soft pressing. This delicate process is essential to preserve the flavors and aromas of Riesling. The decanted must then ferments at controlled temperatures in stainless steel, remaining in contact with the fine lees for 10 months, with bi-weekly bâtonnage practices in the first six months to enrich the structure of the wine.
It has a pale yellow color and green reflections. On the nose, it shows the aromatic precursors typical of the variety such as white apple, plum, lemon and yellow flowers. The taste is perfectly dry, with a balanced acidity and a characteristic mineral profile that emerges as the strong point of this youthful phase, making it fresh and lively on the palate.
Ideal food pairings include dishes that reflect its vibrant acidity and marked flavor. It is particularly suitable for fish dishes such as baked mackerel or steamed red snapper, and goes well with dishes based on rice and vegetables, raw vegetables. In ethnic cuisines, it is excellent with sashimi or even with Latin American dishes such as quesadilla. Its freshness and mineral structure make it capable of enhancing a variety of flavors.
