Planeta's Eruzione 1614 Pinot Noir is produced in Sicily, specifically on the terraces of Sciaranuova, near the lava flows left by the 1614 eruption. These soils, black and rich in minerals due to the presence of lava sand, give unique characteristics to the wine . Viticulture is managed with organic and sustainable methods, respecting the surrounding environment and maintaining the natural balance of the terroir.
The harvest takes place manually with selected and chilled grapes before destemming, which takes place without pressing. Fermentation takes place in concrete tanks with temperature control and light manual punching down. The process includes 13 days of maceration on the skins, followed by gentle pressing. The refinement of the wine is carried out in steel and ceramic containers.
It has a lively red color, an expression of elegance and delicacy. A complex aromatic profile emerges on the nose with notes of flint, ink, wild plums and cherries. On the palate, the wine offers a structure of velvety but lively tannins, which translates into a balanced and pleasantly persistent tasting experience that gives good vibrations.
Recommended pairings include refined dishes such as quail and woodcock, ideal for enhancing its organoleptic qualities. It also pairs beautifully with cheeses such as fresh caciocavallo or vegetable dishes such as a cauliflower flan, creating a perfect combination of food and wine that enhances both elements.
