Description
Pellegrino's Capoarso is an emblematic example of the red wines of Western Sicily, an area known for its ideal pedo-climatic conditions which include clayey soil, rich in minerals, and a warm and ventilated climate. These characteristics, combined with a particularly dry and dry environment with notable temperature variations, allow the Perricone vine to best express its innate peculiarities.
The harvest takes place in September. Fermentation takes place with a long maceration at a controlled temperature. Subsequently the wine is aged for at least 5 months, alternating between steel tanks and barriques.
In appearance it has an intense and brilliant red color. The olfactory bouquet is characterized by a delicate spiciness that harmoniously binds to the scents of violet and balsamic notes. On the palate, the taste is distinctly rustic and savory, supported by a solid tannic structure which guarantees balance and pleasantness.
It finds a perfect match with cured meats, cheeses and red meats, enhancing their flavors with its structure.
