Description
The Sicilian red wine Passivento is produced by Barone Montalto. The winery was founded in 2000 and is based in Santa Ninfa, in the province of Trapani. The estate manages about 400 hectares of vineyards, partly owned and partly by contributors, located in the Bèlice valley, in the Valley of the Temples and in Noto, in the south-eastern part of Sicily. The red Passivento is one of the flagship wines of the winery.
It is made with grapes from vineyards of Nero d'Avola grown on alluvial soils, composed of silt, clays and sands. The harvest takes place in a late period, with partial drying of the bunches in the vineyard, which is then completed in the loft with a dehydration of the berries. Fermentation takes place with maceration on the skins and the wine is then aged until it reaches the right expressive harmony.
Dark red in colour, it gives aromas of ripe red fruit, caramelized figs, small berry jam and hints of spice. On the palate it is warm and enveloping, with velvety tannins, soft and intense aromas.
Ideal in combination with red meats, aged cheeses and game-based recipes.
