Terre Siciliane Nerello Mascalese Làvico was born in the Vajasindi estate of Duca di Salaparuta, located in the municipality of Castiglione di Sicilia, on the slopes of Etna, on the side of the Alcantara valley.
It is obtained from pure Nerello Mascalese grapes, harvested exclusively by hand once it has reached perfect ripeness. Fermentation takes place, with maceration on the skins, in stainless steel tanks at a controlled temperature of 26-28 ° C for a period of 7-8 days. After malolactic fermentation, the wine ages in oak barriques for about 12 months and in bottle for 6 more months, before being released on the market.
Làvico di Duca di Salaparuta has a ruby red color with garnet reflections. The nose opens with an intense and complex bouquet, with intense spicy vanilla aromas, enriched with pleasant notes of red fruit. On the palate it is well structured and elegant with an austere tannins and a pleasantly persistent finish.
This red wine is perfect to accompany red meat dishes and aged cheeses. Served chilled (15 ° C) it goes well with savory fish dishes.
