Description

Cavadiserpe di Mandrarossa comes from the south-western coasts of Sicily, in the terroir of Menfi, from an unusual and unique blend that combines the roundness of Merlot with the precious aromatic notes of Alicante Bouschet. The vineyards enjoy a south-west exposure arranged on medium-textured limestone soils.

The harvest takes place in the third week of August. The two varieties undergo a different maceration process: Merlot for 6-8 days at a temperature of 22-25 ° C, Alicante Bouschet for 2-3 days at a temperature of 16-18 ° C. Once assembled, fermentation takes place in steel tanks for 3 months. The wine ages for 6 months in barrique and ages for 3 months in the bottle.

Upon visual examination it shows a ruby red color with purple reflections. The nose reveals a bouquet characterized by aromas of plum and plum jam, aromatic herbs and spices. On the palate it is intense, harmonious and soft.

It goes well with lamb chops and roast potatoes but is also appreciated with timbales of macaroni and medium-aged cheeses.
