Description
Pecorino produced with grapes from the Theatine town of Ortona, in the province of Chieti.
It consists exclusively of Pecorino grapes, left in contact with the skins for about 12 hours at a low temperature and subjected to a soft pressing. The must ferments for 80% in steel vats at a temperature of 12 ° C and for the remaining 20% in oak barrels.
Straw yellow in color with light greenish reflections, it expresses itself on the nose on notes of pear in the first place, followed by balsamic hints witnessing the quality of the wood used in fermentation. Already at the entrance it is enveloping and structured, pleasantly fresh and persistent.
Ideal as an aperitif, it goes well with all fish dishes.
