Description
The Taurasi Aurelia of Rocca del Principe is produced in the Campore district, in Lapio, from vineyards facing south-east on clayey limestone marl. This specific geographical location ensures excellent ripening of the Aglianico grapes.
Manual harvesting takes place in the first ten days of November. Fermentation takes place in steel tanks with prolonged maceration of the skins for 25 days. The refinement of the wine continues for 12 months in barrique, followed by 12 months in Slavonian oak barrels and a further 18 months in the bottle.
It has an intense ruby red color. The nose reveals a rich and complex bouquet with notes of black cherry, ripe plum, tobacco, spices and balsamic accents. On the palate, the wine is full, warm and dynamic with balanced tannins and a long and persistent finish that brings to mind ripe fruit.
This wine pairs masterfully with rich first courses, cold cuts and cured meats, game, red meats and mature cheeses, offering a satisfying gastronomic experience.
