Description
The Sylvaner of the Novacella Abbey originates from vineyards located in the Bressanone basin, inside the Valle Isarco, characterized by cool nights and good ventilation.
It ferments and ages almost entirely in stainless steel, with a quarter of the mass carrying out both stages in acacia barrel. The aging period is at least 6 months.
Straw yellow with greenish hues, it has a beautiful fruity nose that revolves around the hints of ripe pear and melon. On the palate it surprises in terms of robustness and structure, but at the same time for elegance.
Perfect in combination with the first courses of South Tyrolean cuisine, especially with dumplings, but also with salads and asparagus mousse.
