Description

A pure Sauvignon Blanc that expresses in the glass all the bursting of its land of origin, Alto Adige, comes to life from a rigorous selection of the grapes and a manual harvest, as was done in the past. After arriving in the cellar there is a delicate pressing of the whole bunch and a racking by natural sedimentation. Secondly, there is a slow fermentation at a controlled temperature and aging for 9 months on fine yeasts, half part in large wooden barrels and the remaining half in stainless steel barrels. This is followed by the assembly operation, carried out 3 months before bottling.

A sparkling yellow color illuminates the glass and the nose is immediately intoxicated by an exotic and captivating bouquet, with colorful notes of mango and papaya, lime and red grapefruit, which combine with herbaceous hints such as lemongrass, lemon balm and green tea, to which envelop notes of elderberry syrup and mineral veils of flint. The palate is all played between mineral aromas and fruity notes, which blend harmoniously into a rich flavor that veers towards a persistent aftertaste.

Thanks to its splendid organoleptic profile, it is the most suitable wine to accompany oysters, salmon tartar and crudité of shellfish, as well as an excellent green apple risotto with grilled wild char fillet. Absolutely to try with steamed lobsters.
