Description
The Sauvignon Mock of the Cantina di Bolzano rises in the homonymous estate, whose vineyards extend along the steep slopes in the surroundings of Bolzano, at an altitude of 500 meters above sea level.
It is produced only from Sauvignon Blanc grapes, harvested during the month of September. After a soft pressing of the grapes, the must ferments in steel at a controlled temperature. The wine ages in steel barrels inside which preserve its freshness.
It has a straw yellow color with greenish reflections. On the nose, vegetal hints of tomato leaf and nettle stand out, followed by aromatic and elderberry hints. The taste is intense and dry, pleasantly fresh and persistent.
Ideal in the company of salads and asparagus, it is excellent to serve fresh as an aperitif.
