Description
The Pinot Nero Riserva of the Sanct Valentin line is obtained from the noble Burgundian grape variety Pinot Nero, harvested from a selection of the best and oldest vineyards of San Michele Appiano, with an age ranging between 10 and 24 years.
Harvest at the end of September, followed by cold maceration for 3 days and fermentation in steel containers. After finishing the malolactic fermentation, the wine ages separately between tonneaux and oak barriques for about 12 months, then for another 6 months in wooden barrels once the two lots are assembled.
It appears in the glass of a beautiful ruby red. The nose is played on aromas of blueberry and violet, reached by pleasant puffs of toasted vanilla, and of truffle and porcini mushrooms with the evolution in the bottle. The mouth is soft and seductive, accompanied by a beautiful spicy texture.
Ideal with portions of stewed lamb, it excels in the company of cheeses with a very intense flavor.
