Description
Obtained from grapes harvested exclusively in areas ideal for soil and microclimate, Pinot Noir Schweizer is the fruit of very low yield plants in which the qualitative component is mainly enhanced.
A vinification with open tanks interspersed with frequent pumping over and punching down allows a richer extraction of coloring substances and aroma of the skins during the maceration phase. Performs malolactic fermentation in barriques where it matures for up to 12 months. Once bottled the wine stays in the bottle for an equally long period.
It has a more or less intense ruby color. It displays complex aromas of ripe berries and dark cherry on the nose, with spicy references to pepper and leather. There is full correspondence with taste, based on coordinates of elegance and finesse, showing itself at the same time a harmonious wine with good structure.
Suitable to accompany dishes with pheasant and duck, it is excellent with red meats and long-aged cheeses.
