Description
The Pinot Noir of the Novacella Abbey rises from the vineyards of the hamlet of Cornaiano, in the municipality of Appiano, located on the sunny hill of Oltradige.
Vinification takes place in steel with maceration on the skins for 15 days. After finishing the malolactic fermentation the wine ages for 6 months in oak barrels.
Purple red tending to ruby by the glass, it has a smell of strawberry, raspberries and plums which is enriched with notes of truffle and chocolate with aging. Dry and full, it has a pleasantly tannic and velvety palate.
Excellent with rabbit roast flavored with juniper or soft cheeses such as fontina or taleggio.
