Description
Ritterhof's Gratus originates from clusters of Cabernet Sauvignon that ripen in the sun-bathed lowlands of Bassa Atesina and on the heights around the town of Montagna, in the province of Bolzano. The clayey and sandy soils and the microclimate of this wine-growing area provide optimal conditions for cultivation.
The grapes are carefully selected and pressed, then fermented for 12 days at a temperature of 28 °C. A long maceration allows an excellent transfer of coloured pigments, tannins and aromas to the wine. Ageing takes place for 15 months in small French oak barrels and for a further 5 months in the bottle.
Ruby red colour, its olfactory register is centred on notes of blackberry, sandalwood and tomato leaf. On the palate, it is soft and structured, with a satisfying taste.
At the table, he prefers game-based dishes and red meat main courses.
