Description
The Sauvignon Blanc from Tenuta Castel Sallegg comes from the historic Leisenpuiten vineyard, located in the heart of Caldaro at 500 meters above sea level, in Alto Adige. Obtained from 100% Sauvignon Blanc grapes grown where the evening breeze carries fresh air from the surrounding mountains.
The winemaking process involves manual harvesting of the grapes, followed by soft pressing and fermentation at a controlled temperature in stainless steel tanks. The wine then ages on the fine lees, developing a notable aromatic complexity and a balanced structure.
Bright straw yellow in color, it is a wine with an aromatic bouquet, with notes of elderflower, gooseberry and ripe yellow peach. On the palate it stands out for its juicy notes and fresh acidity, with a long and mineral finish that enhances its pleasantness. The herbaceous profile harmoniously combines with the fruity characteristics, making it an elegant and vibrant wine.
Excellent as an aperitif, it pairs perfectly with cream soups, asparagus-based dishes, fish, white meats and mature cheeses.
