Description
The Pinot Noir of Tenuta Castel Sallegg is obtained from 100% Pinot Nero grapes grown on the clay soils of the prestigious Preyhof vineyard in Caldaro, Alto Adige. This wine benefits from a cool microclimate, ideal for the development of fruity and spicy notes typical of this variety, giving elegance and finesse to its character.
The grapes are harvested and selected by hand, followed by a 5-day cold maceration. Alcoholic fermentation takes place in stainless steel tanks, followed by malolactic fermentation. The refinement takes place in barriques and tonneaux for 12 months, with a further 6 months of rest in the bottle before being released for sale.
It stands out for its bright ruby red color and delicate aromas of red fruits such as cherry, currant and blueberry emerge on the nose, accompanied by light spices. On the palate it is full and round, with silky tannins and an elegant texture. The finish is long and persistent, leaving a velvety and harmonious sensation.
This Pinot Noir pairs perfectly with dishes of beef tartare, grilled tuna, roasted meats and mature cheeses.
