Description
Pinot Noir Buchholz is a wine produced by the Castelfeder winery in the vineyards of the steep slope of Buchholz, located between 440 and 500 meters in the municipality of Salorno, in Alto Adige. The wine terraces benefit from significant sun exposure, which allows the grapes to ripen slowly, developing the distinctive character of this wine.
Winemaking begins with a manual harvest followed by destemming and maceration that lasts from 10 to 14 days in steel tanks. Subsequently the wine matures for 12 months in small used barrels and undergoes a minimum refinement of three months in the bottle.
The Buchholz Pinot Noir has a light color and low extract; the aromatic profile is expressed in a balance of fruity and floral notes, with a mineral touch. On the palate it stands out for a fresh, elegant and delicate taste, characterized by good acidity.
This wine pairs perfectly with spicy fish dishes, red meat and mature cheeses.
