Description
Pinotage Paul Sauer is a wine from the Kanonkop company, located in Stellenbosch, one of the most famous wine-growing areas in South Africa. The label is dedicated to the man to whom the company owes its fortune, Paul Sauer. The story of the name "Kanonkop" is reminiscent of a cannon placed on top of Mount Simonsberg warning farmers of the arrival of merchant ships in Table Bay, so that they could set out to barter for goods.
The fermentation of the grapes takes place in concrete vats kept at 29 ° C, during which punching down is carried out every 2 hours. After malolactic fermentation, the wine is aged for 24 months in new French oak barriques.
Intense ruby red color, the nose reveals aromas of wild berries, fresh herbs, graphite and spices. The sip is complex, fresh and spicy, with a persistent finish.
Paul Sauer is ideal in combination with red meats and stewed or roasted game.
