The Alto Adige Pinot Nero Pas Dosè by Franz Haas is a refined expression of classic method sparkling wine, coming from the Alto Adige area. Pinot Noir grapes, grown at an altitude that varies between 750 and 1,150 meters, find their ideal habitat on mixed soils of dolomite and porphyry. The exposure of the vineyards to the south and south-west favors the optimal ripening of the grapes, giving the wine unique characteristics.
The harvest follows a careful approach which involves partial pressing of the whole grapes and destemming followed by pressing of the remaining part. The fermentation takes place at a controlled temperature in steel tanks, as does the refinement which lasts 6 months with further maturation on the yeasts for approximately four years. The process culminates with disgorgement six months before marketing.
It has a bright and fascinating yellow color, characterized by a fine and persistent perlage. On the nose, notes of yellow pulp fruit, white flowers and citrus fruits stand out. In the mouth, it reveals a citrus and mineral freshness that leads to a savory and pleasantly long-lasting finish.
