Description

Tilio is a sparkling wine born from the continuous research and innovation in the Charmat method of the Foss Marai company, which takes the form of the experimental work of the "Club dei Saggi", experts who carry out various stages of "blind" tasting tests with the aim of developing new products obtained from indigenous yeasts.

Foss Marai creates this sparkling wine starting from a careful selection of Chardonnay grapes to which a variable percentage of precious Bombino Bianco grapes is added. The first fermentation takes place slowly in a steel tank by the action of a specially selected indigenous yeast, while the second takes place in a pressurized tank according to the cellar's over thirty years experience in using the Charmat method. No sugars are added to the disgorgement during the dosage phase from which a natural extra brut sparkling wine is born.

It manifests itself in the glass with a beautiful straw yellow colour and a minute and persistent perlage. The bouquet of aromas that develops on the nose presents fragrant and delicate notes of acacia flowers, white peach and apple, embellished with light iodized and mineral touches. The taste is lively and creamy, with an enveloping and round tone.

Perfect to serve as an aperitif, it is well suited to fish recipes, both raw and cooked.
