Description
Monte Carbonare Soave Classico by Suavia is a white wine obtained from pure Garganega grapes. Produced in the Carbonare area, characterized by deep black volcanic soils, this wine reflects the essence of the territory, with a strong and decisive personality. The vines are trained using the Veronese pergola system and have an average age of about 60 years.
The vinification takes place in steel, with an alcoholic fermentation that lasts 16 days at controlled temperatures between 14 and 16 °C. The wine then ages for 12 months in contact with the fine lees, always in steel tanks, and completes a further 6 months of refinement in the bottle. Malolactic fermentation is not carried out, thus maintaining the freshness and flavor typical of Garganega.
It has a bright straw yellow color. The nose perceives sulfurous and smoky notes, with hints of flint, citrus and wild flowers. On the palate it is creamy and elegant, with a vibrant freshness and a marked flavor. The finish is dry and very persistent, leaving a lasting impression.
This wine is ideal to accompany fish dishes, tasty white meats and vegetable risottos. It also pairs splendidly with truffle dishes and medium-aged cheeses.
