Description
Le Sénie is a Sicilian expression of the international Viognier grape. The name is a tribute to the Arab culture that has had a strong influence on the local one throughout history and refers to the water wheel introduced in the 9th century as a field irrigation system.
After the harvest carried out during the third week of August and a short cold maceration, the must ferments in steel for 15-20 days in which the temperature is kept under control at 16-18 °C. It then continues with a maturation phase of 4 months in steel tanks.
The colour is straw yellow with golden veins. The nose opens on notes of ripe fruit, medlar, yellow peach and apricot above all. The sip is full and opulent, with slight mineral hints that mix with fruity and bitter almond notes in the finish.
It goes perfectly with grilled fish and fried food. Recommended with a fish-based couscous.
