Description

Sicilian white inspired by Ludovico Corrao's dream, a dialogue between the Mediterranean culture represented by the indigenous Catarratto grape and the international one symbolized by Chardonnay, one of the most popular white varieties in the world.

The Catarratto and Chardonnay grapes undertake two separate vinification routes. After a short cold maceration, the must obtained by soft pressing of the grapes ferments spontaneously in steel by indigenous yeasts. The blend is composed and the resulting wine ages for 6 months in steel, then for another 6 months between steel and French oak tonneaux, to then finish the aging with 6 months in steel and 4 months in bottle.

The result is a bright straw yellow wine with greenish reflections. It enchants the sense of smell with notes of white-fleshed fruit, including plum, apple and pineapple, achieved by elegant hints of flint which gradually become more concentrated with evolution. In the mouth it is round and complex, with a splendid minerality, envelopment and freshness.

Excellent in the company of all fish-based courses, it is amazing when paired with a fish couscous.
