Description
I Sensi Syrah Il Tatto is a red wine from Abbazia Santa Anastasia, produced in Sicily with 100% Syrah grapes, grown in the Madonie at an altitude between 450 and 500 meters above sea level. This wine is certified organic, underlining the commitment to sustainability and quality.
The red winemaking process begins with crushing and destemming and a light cryomaceration in concrete tanks, followed by alcoholic fermentation with frequent punching down and a temperature ranging from 22 to 28°C. The process involves at least one delestage per day and a period of maceration on the skins for another 15 days after fermentation. The refinement takes place for about 6 months in glass-lined concrete tanks, followed by a light passage in large barrels for another 6 months, with a further 6 months of refinement in the bottle.
This wine has an intense, lively ruby color with almost violet reflections. On the nose it offers a broad and generous aroma, with intense notes of small wild red fruits and a delicate bouquet of spices including nutmeg, white pepper, green cardamom and vanilla. On the palate it is soft and enveloping, with a sweet and silky tannin, great persistence and a marked minerality that highlights the ripe fruit.
This Syrah pairs perfectly with grilled red meat dishes and mature cheeses.
