Description

I Sensi Nero d'Avola Il Gusto dell'Abbazia Santa Anastasia is a red wine produced with 100% Nero d'Avola grapes, grown according to the principles of organic farming. The vineyards are located in Castelbuono, in the Santa Anastasia district, in Sicily.

The vinification is traditional in red, using steel autovinification tanks at a controlled temperature between 20 and 24°C for 12-15 days. The wine ages for 9 months in steel tanks, followed by a short passage in oak barrels for about 4 months and completes the refinement with 6 months in the bottle. This process allows to give the wine a balanced structure.

This Nero d'Avola has an intense ruby red color with purple reflections. On the nose it offers immediate aromas of red fruit such as cherry, raspberry, blackberry and mulberry, accompanied by floral notes of violet and lavender. On the palate this wine is structured and persistent, with gentle tannins and hints of red fruit that intertwine with spices such as vanilla, anise and cinnamon.

This red wine pairs perfectly with cheese and cured meat platters, meats, legume soups and risottos.
