Description
Montenero is a red wine from Abbazia Santa Anastasia produced with a blend of Nero d'Avola and Cabernet Franc, both grapes from biodynamic cultivation. The vineyards are located in Castelbuono, Sicily, on the Montenero Hill at 500 meters above sea level.
The vinification is traditional in red, using oak vats, with spontaneous fermentation thanks to indigenous yeasts and controlled temperatures for about 20 days. The maceration on the skins is long, lasting 30 days. Then the wine ages for 2 months in cement tanks and completes the malolactic fermentation in first and second passage French oak Allier barriques for 24 months, followed by 12 months of aging in the bottle.
Montenero has an intense ruby red color and a powerful and austere aroma that combines the distinctive scents of both vines. The nose perceives aromas of undergrowth, moss and red fruit, accompanied by notes of vanilla, licorice, coffee and spices such as cinnamon and mace flower. On the palate this wine is powerful and vigorous, with a velvety and broad structure, well balanced by tannins that enhance the spicy aromas.
This red wine pairs perfectly with red meat, game, venison, risottos and first courses with a strong flavour.
