Description

I Sensi Grillo La Vista dell'Abbazia Santa Anastasia is a white wine produced with 100% Grillo grapes, grown according to the principles of organic farming. The vineyards are located in Castelbuono, Sicily, on the Collina del Frassino at an altitude of 450 meters above sea level.

Fermentation takes place in steel tanks, using indigenous yeasts and at controlled temperatures that start from 15°C and reach a maximum of 18°C. They are long and gradual, lasting about 15-20 days, to ensure adequate aromatic complexity. The wine matures for 30 days on the yeasts and is refined for a further two months in the bottle.

This Grillo has a clear straw yellow color. On the nose it offers intense aromas with varietal notes of citrus fruits such as pink grapefruit, lemon, mandarin and orange, accompanied by tropical hints of pineapple and passion fruit. On the palate this wine is persistent and fresh, with good acidity and a long and soft finish with hints of medlar and nectarine peach.

This fresh and fruity white wine pairs perfectly with fish dishes, shellfish, seafood, first courses with vegetables or second courses of white meat.
