Description
The Baccante dell'Abbazia Santa Anastasia is a white wine produced with 100% Chardonnay grapes grown according to the principles of Demeter certified biodynamic agriculture. The vineyards are located in Castelbuono, Sicily, on the Collina del Frassino at 450 meters above sea level.
The winemaking process begins with fermentation in cement tanks for a more natural relationship with the cold. Fermentation occurs with indigenous yeasts and begins spontaneously after about 24 hours. After a third of the alcoholic fermentation, the must is transferred to white oak barrels, where fermentation continues at a constant temperature of 18°C for about 15-20 days. Maturation occurs for 3 months on the lees with weekly batonnage, followed by 12 months of aging in barriques and 6 months in the bottle.
Baccante has a clear, intense straw color with golden reflections. On the nose it offers intense aromas of acacia honey and chamomile, accompanied by notes of ripe fruit such as pineapple and white plum, followed by hints of dried fruit and vanilla. On the palate it is persistent and long, enveloping but fresh in the finish.
This complex and elegant white wine pairs perfectly with first courses, mushroom risottos, white meats and soft, slightly aged cheeses.
