Description
St. Ana 1861 by Emilio Hidago is a Sherry Pedro Ximénez that originates from vineyards located in the heart of Jerez de la Frontera, and is made up of 100% Pedro Ximénez grapes. It contains a part of 1861 vintage wine and, for this reason, it can be considered as a precious ancient jewel. Produced in limited quantities, this Sherry has an immense historical and enological value.
The winemaking procedure follows the Soleras method. It involves the use of small oak barrels, organized according to a pyramidal structure that allows to create blends of different vintages, making the wine proceed with a "cascade" sequence. When it needs to be bottled, the wine is taken from the layer of barrels placed at the base. Therefore, emptied of part of the content (they are never emptied completely), they are filled by taking a share of wine from the barrels just above which, in turn, will be filled by those of the upper level. Those placed on the top will be filled with the new vintage wine. St. Ana contains wine dating back to 1861.
The intense and deep red color introduces an olfactory bouquet marked by fascinating ethereal and dried fruit notes, toasted notes of coffee, chocolate, tobacco, on a background of sweet and vaguely balsamic spice. In the mouth it is very elegant, persuasive, soft, fresh and engaging. It closes in a precise and composed finish, but still rich in taste. A wine that can be remembered!
