Description
The Seriously Cool Cinsault from the Waterkloof winery is made with Cinsault grapes from the Stellenbosch area.
The grapes used come from vines with 35 years of age and raised on soils of granite rock mixed with sands. The winery operates with a minimalist approach that involves spontaneous intracellular fermentation with the use of whole bunches. The wine is left in contact with the skins for 30 days. This is followed by malolactic fermentation and aging in large barrels for 8 months before bottling.
Ruby red in color with purple reflections, it has fragrant hints of flowers such as rose and jasmine immediately finished by red fruits and a light toasted note. On the palate it is rich and tasty, with a good fruity return and pleasant complexity expressed by a recognizable structure and soft tannins.
Ideal with roasted and stewed meats, it is to be tried with salami and pici with wild boar ragout.
