Description
The Savigny-Lès-Beaune 1er Cru Aux Serpentières Domaine Maurice Ecard is a wine that finds its roots north of the Côte de Beaune. The vineyard located in one of the oldest properties at the entrance to the village of Savigny is positioned on the slopes on the right, in an area remarkably favorable for the cultivation of Pinot Noir, thanks to a soil composed of limestone mixed with clay.
Traditional winemaking takes place in thermo-regulated stainless steel tanks, with a cold and controlled pre-fermentation maceration. This process is followed by a long fermentation during which pigeages and pumping over are carried out to obtain a wine of superior structure and complexity. The refinement takes place in oak barrels for 15 months, using 40% new oak and 60% barrels aged between 1 and 3 years, mainly coming from the Vosges region, thus enriching the wine with woody notes.
It has a cherry red color, and a fruity bouquet of strawberry and blackcurrant, accompanied by woody notes of dried fruit and coffee. In the mouth, the wine is generous, expressive and correct, with a nice tension in the finish, thanks to the balance between acidity and tannins.
It is the ideal pairing with beef, roasts and cheeses such as Mont d'Or, thanks to its ability to complement intense and structured flavours.
