Description
Joseph Drouhin's Savigny-Les-Beaune is a red Burgundy wine made from Pinot Noir grapes, grown in the vineyards surrounding the picturesque village of Savigny-les-Beaune, located in a small valley north of Beaune. The vineyards extend over two hillsides with different exposures, offering a wide variety of terroir characteristics. The soil is a complex mix of gravel and limestone, red clay and crushed stone.
The winemaking follows a traditional approach with the purchase of grapes and musts from partner producers who respect a strict specification. The grapes are harvested manually in perforated crates, with careful selection. After total destemming, fermentation and maceration take place in small open tanks for 2-3 weeks, with the use of indigenous yeasts. The refinement is carried out in oak barrels for a period of 12-16 months.
This wine is delicate and elegant, with a bouquet that reveals spicy notes, violets and wild blackberries, characteristic of its terroir. On the palate it is refined and soft, with a long and subtly enveloping persistence, showing a great harmony between aromas and structure.
It pairs perfectly with white meat dishes, duck and medium-aged cheeses.
