Description
Sauvignon Sémillon is a blend produced from Pegasus Bay from the Waipara Valley and from soils with low fertility.
With grapes harvested from vines over 30 years of age, the Sauvignon is harvested in April and Sémillon in May. The varieties are processed separately with fermentation in steel for Sauvignon and in oak for Sémillon. Part of the Sauvignon is fermented in cask to add complexity and body. Both ripen in contact with the yeasts for at least 10 months before proceeding to the composition of the blend. The wine refines in the bottle one more year before being released.
Straw yellow in color, it opens on the nose with aromas of white flowers, lime, gooseberries and passion fruit. The softness of Sémillon balances the herbaceous notes of Sauvignon on the palate, offering a calibrated minerality and a softer taste also thanks to the contact with the yeasts. Overall harmonious taste with a medium-long finish.
Ideal to accompany dishes based on lake fish and white meats served with herbal sauces.
