Description
The Aglianico of La Guardiense originates in Campania, in the Benevento area. Together with Falanghina, it is part of a project aimed at enhancing the indigenous varieties and defining a first idea of zoning the territory.
Once harvested, the grapes are transported to the cellar and the must obtained is macerated with the skins for a period of about 18 days, during which the practice of Salasso is carried out. With this operation, 20% of the present wine is taken, so as to intensify the skins / must ratio and favor the extraction of the substances. It carries out alcoholic fermentation in steel tanks, while malolactic fermentation takes place in 500 l tonneaux. It ages for 6 months in Allier tonneaux, before being bottled in the June following the harvest.
Ruby red, at sight. The nose expands intensely the notes of cherry, vanilla and chocolate, which are confirmed in the mouth. Here they are supported by a well-structured and soft body, nestled between the chisels of tannin and freshness.
To be combined with a medium and high seasoning cheese platter.
