Description
Gerard Fiou's Terroir Silex draws its whole being from the mineral land of Sancerre.
The vineyards are located in the hills of Saint Satur, in the eastern area of the Sancerre denomination, defined by a soil rich in flint. Terroir Silex is a purity of Sauvignon Blanc grapes, produced from 61-year-old vines grown according to an organic farming method. It carries out alcoholic fermentation in stainless steel tanks, where it remains for 6 months of aging in the presence of its fine lees.
At sight it shows a straw yellow color. Its perfume is markedly mineral, faithfully telling its homeland. The texture of flint and plaster is the background for herbaceous notes of thyme and other aromatic herbs; a note of raisins emerges to give a light sweet tone to the nose. In the mouth the flavor reigns supreme, always well managed in the body and balance.
Perfect to accompany an appetizer of brioche bread with butter and anchovies.
