Description
Among the most important denominations of the Puglia region, this Salice Salentino Riserva di Cantele emphasizes the bond of the Negroamaro grape, bunches with sweet pulp and ripeness that constitute the "black soul" of Salento.
The manual harvest takes place during the second half of September and the must ferments in steel at a controlled temperature of 25-26 ° C with 10 days maceration on the skins. Malolactic fermentation and aging in barrique follow for about 6 months.
Upon visual examination it shows an intense ruby red color with garnet streaks. Rich and layered the nose, which announces itself on hints of caramelized red fruits, forest wood, tea and spices. On the palate it shows a good taste-olfactory correspondence to which are added sensations that recall red flowers, revealing itself to be warm, tannic and fresh, overall soft and balanced.
Suitable for accompanying roast veal and beef, it is excellent with game dishes and aged cheeses.
