Description
Salice Salentino by Paolo Leo is a red wine obtained mainly from Negroamaro grapes together with other native vines of the region. The production area extends across the provinces of Brindisi and Lecce, where the vineyards are grown on clayey soils. The plants are grown with the traditional Apulian sapling and counter-espalier system.
Winemaking begins with destemming of the grapes, followed by fermentation of the must at a controlled temperature of 25°C until the end of the fermentation process. The wine then ages for 18 months in steel.
With a ruby red color with garnet reflections, this Salice Salentino has an olfactory bouquet rich in black cherries, cherries and ripe plums. On the palate it stands out for its spicy notes and soft tannins. The finish is voluminous, with a pleasant perception of bitterness which gives depth and persistence to the wine.
This Salice Salentino pairs very well with dishes of medium and important structure, such as sautéed mushrooms, entrecôte and meat bombette, enhancing their complexity and body.
