Description
Cantele's Salice Salentino is an elegant wine produced in the Salento region of Puglia, from vineyards cultivated with the espalier training system and spurred cordon pruning. The harvest of Negroamaro grapes begins in mid-September, ensuring the collection of perfectly ripe grapes.
After destemming and pressing, the must is subjected to maceration on the skins for 7-10 days, with controlled fermentation temperatures between 22 and 26°C. Malolactic fermentation takes place in steel, with the addition of a portion of wine aged for at least 6 months in French oak before bottling.
This wine has an intense ruby red color and garnet streaks. It has a harmonious and complex profile, where the hints of red fruit blend with delicate spicy notes. The taste is soft and enveloping, with a gustatory persistence that invites you to discover every sip.
It pairs perfectly with roast meats and mature cheeses, balancing the intense flavours of these dishes.
