Teresa Manara is not only the mother of Augusto Cantele, founder of the winery and recognized as ambassador of Negroamaro, but also the woman who radically transformed the family passion into a real art of winemaking for future generations and of which she was the muse inspirational. This Negroamaro is dedicated to her, one of the most representative and loved vines of Salento and of the Puglia region in general.
The manual harvest takes place at the end of September. The must ferments in steel at a temperature of 26 ° C and macerates for 15 days in contact with the skins. It then proceeds with an aging in barrique for about 12 months.
It has an intense ruby red color. The range of aromas offered to the nose tells of red fruits, spices, ethereal and mineral notes. The taste is bold and decisive but at the same time fine.
Perfect with roasted or grilled meats, it does not disdain stewed meats and game.
