Description
Cantele's Salento Negroamaro is an authentic and faithful expression of this vine, which represents the black soul of Salento. Known among local farmers with the name of Niuru Maru and used in the last century as a blending wine, today it has its own and typical identity and is among the flagship wines of the Apulia region.
The harvest takes place in mid-September. The must ferments in steel tanks at a temperature of 22-24 °C, macerating on the skins for a period of about 6–7 days. Finally the wine rests in the same containers to complete the ageing phase.
Upon visual examination it shows an intense ruby red colour animated by slight purple reflections. On the nose, it offers seductive notes of black cherry and red plum, interspersed with scents that recall thyme and flint. Wine with a good balance between softness and alcohol, it enters the palate fresh and mineral, with a nice persistence.
Recommended in combination with roasts and grilled red meats, it is an excellent accompaniment to rich first courses and aged cheeses.
