Description
Simera di Castello Monaci presents itself as a modern wine for the Salento tradition.
It is entirely made from Chardonnay grapes, harvested in the second decade of August. After a soft pressing and a static cold settling, the fermentation takes place at a temperature of 12-15 ° C. Finally, the wine rests on its own yeasts, undergoing several batonnage before being bottled.
The wine is characterized by a straw yellow color, with greenish reflections. The nose offers an intense aroma of fresh fruit. In the mouth it is fresh, enveloping and soft, with a persistent and interesting aftertaste.
This wine goes very well with appetizers and delicate first courses. It is special with fish and shellfish dishes.
