Description
Jo by Gianfranco Fino is a Negroamaro produced in the Manduria area of Puglia, from vineyards cultivated on clay-limestone soils. The Mediterranean climate, characterized by the sea breeze from the Ionian and the warm Apulian sun, allows for the production of a wine of great elegance and aromatic intensity.
The harvest is carried out manually with a careful selection of the bunches, transported in refrigerated trucks to preserve their freshness. After destemming and soft pressing, the must macerates with the skins for two to three weeks in stainless steel tanks, with temperature control and daily racking. Pressing is done using a vertical hydraulic press and the wine ages for about nine months in wood, followed by a twelve-month bottle refinement.
In appearance, it presents itself with an intense ruby red color. The bouquet is refined and enveloping, with notes of red fruits and flowers intertwining harmoniously with hints of Mediterranean scrub. On the palate, it is soft and fruity, perfectly consistent with the olfactory profile, with a long persistence that enhances its balance.
It pairs perfectly with important first courses, red meat dishes, game, and blue cheeses.
