Description
Moscato Passito del Salento Polline is a sweet white wine produced by San Marzano, in Salento, Puglia, at about 130 meters above sea level. The grape variety used is Moscato, grown on espalier on medium-textured soils tending to sandy, rich in skeleton and calcareous marl. The climate is characterized by high thermal sums and medium-low rainfall.
After the manual harvest carried out in the early hours of the morning during the last ten days of August, the grapes are dried for about two weeks in the fruit cellar. The soft vacuum pressing precedes an alcoholic fermentation of two weeks in steel silos at temperatures between 16°C and 18°C. The refinement foresees that 80% of the mass remains in steel, while the remaining 20% matures in French oak barrels for four months.
It has a bright straw yellow color with golden reflections. On the nose, fresh hints of white flowers are perceived, accompanied by notes of ripe peach and apricot with a hint of vanilla. On the palate, it is sweet and fragrant, with persistent fruity notes balanced by a soft touch of honey and a pleasant freshness.
It pairs perfectly with dry pastries and baked desserts, offering a unique experience even as an aperitif or ingredient in cocktails.
