Description
The Coribante sees the light in the Salento vineyards of Castello Monaci, in Puglia.
This wine is produced from Syrah and Malvasia Nera di Lecce grapes. The latter are lightly dried before being vinified. The vinification takes place at a controlled temperature, with about 2 weeks of maceration and frequent pumping over. Subsequently, the Malvasia Nera wine of the product evolves for about 12 months in French barriques, the rest remains in steel.
It has a dark purple-red colour. The nose offers a broad aroma of ripe red fruit, with notes of cherry, raspberry, elderflower. In the mouth it is soft and balanced, with a mineral finish.
It goes perfectly with roasts, stewed meats and game. It is ideal with well aged cheeses.
