Description

Teresa Manara is not only the mother of Augusto Cantele, founder of the winery, but also the woman who gave a vital impulse to the realization of the project and the affirmation of a true art of winemaking, acting as the inspiring muse for subsequent generations. This Chardonnay is dedicated to her, demonstrating the potential and personality of this international grape variety in the Salento area.

The manual harvest takes place during the second half of August. Once harvested, the bunches are de-stemmed and then proceed with the pressing and cooling phase of the must which is brought to a temperature of 10 ° C. Fermentation takes place first in steel and then in barrique. The wine thus obtained remains to refine on the fine lees in barrique for about 6 months.

Intense straw yellow in color with intriguing green and golden nuances, it exposes an aromatic range to the nose characterized by spicy notes, floral aromas of acacia and vine, with the addition of homegrown fruity and ripe exotic hints. In the mouth it is velvety and fresh, embellished by the sweet spiciness of the wood that conquers the palate in all its persistence, making all the peculiarities of the terroir of origin evident.

It gives its best when paired with fish or vegetable dishes, as well as in the company of white meats and fresh cheeses.
