Description
Augusto Cantele was one of the visionary pioneers of contemporary Apulian Chardonnay, capable of reflecting the terroir in which it is grown, namely the warm Salento, more precisely that of the areas of Guagnano, in the province of Lecce, and of Montemesola, in the province of Taranto.
The harvest takes place during the first ten days of August, followed by soft pressing of the bunches and cooling of the must at a temperature of 10 ° C. Fermentation takes place in steel tanks at a controlled temperature of 15 ° C. Always ages in steel until bottling.
The color is straw yellow with slight greenish reflections. The olfactory bouquet gives sensations of lily of the valley, magnolia, broom and thyme, combined with pleasant fruity and herbaceous notes in the background. On the palate it is fresh, savory and soft, with an immediate sip and a harmonious finish.
Accompanies all preparations of seafood, especially fish, molluscs and crustaceans.
