Description
The Saint-Romain Cuvée de la Mésange from Maison Ponsot is a refined white Burgundy made with Chardonnay grapes from the Côte de Beaune, one of the most renowned regions for high-quality viticulture. This wine expresses the characteristics of the terroir, where the cool climate and limestone soils give the wines a lively freshness and a distinctive minerality.
The vinification takes place with a controlled temperature fermentation in stainless steel, followed by an aging in French oak barrels. This process allows to enhance the varietal notes of Chardonnay, enriching them with delicate woody nuances and a balanced structure.
On the nose it presents aromas of peach, pear and apple, accompanied by mineral notes and subtle hints of honey and stone. On the palate it is fresh and well structured, with a pleasant acidity that balances the fruity flavors and a delicate complexity deriving from the aging in wood, which leaves a long and harmonious finish.
This white wine pairs perfectly with fatty fish dishes such as salmon or tuna, as well as fresh seafood and soft cheeses.
