Description
Château Pavie is one of the most recent cellars in Bordeaux, considering that the works on the château we know today, designed by the architect Alberto Pinto, were completed in 2000, while the radical renovation of the cellar was completed in June 2013. A Château Pavie belongs to a single vineyard block (37 hectares) which is also the largest of all St. Emilion Grand Crus.
Following the strictly manual and selected harvest, the grapes undergo a cold pre-fermentation at 8 ° C for 8-9 days, followed by vinification in 20 wooden barrels at a controlled temperature. The aging of the wine takes place in French oak barriques, of varying age according to the vintage, for 18-24 months.
Intense ruby red in the glass, the wine presents itself to the nose with aromas of plums, blueberries and blackberries, spices and chocolate, which do not lack mineral hints. On the palate the elegance and sumptuousness of this wine explodes, well balanced between softness and hardness, with a satisfying, long finish.
Ideal in combination with roasted, braised and grilled meats, also accompanied by mushrooms.
